Meal in a Skillet
6 lean pork chops
1 tablespooon shortening
2 tablespoons onion, chopped
1 green pepper, sliced in rings
1 (2-1/2 cups) can tomatoes
1/3 cup rice
1 teaspoon salt
1/4 teaspoon black pepper
Brown the chops in hot shortening, pour off any excess. Add onions and green peppers; pour tomatoes over the top. Sprinkle the rice over the chops, also salt and pepper. Cover and cook over low heat until chops are tender; about 1 hour.
